Vegetable Croquette

Vegetable croquette is a kidney food recipe for renal patient, patients with kidney disease.

Ingredients

186 grams potatoes, medium size, boiled, dialyzed and mashed
90 grams squash, boiled, dialyzed and mashed
90 grams onion, chopped
31 grams all purpose flour
11 grams butter, unsalted
8 grams celery, chopped
1 piece egg, white
1 teaspoon curry powder
oil

Procedure

1. Saute onion.
2. Add celery and curry powder.
3. Cook for 1 minute.
4. Mash squash and potato with butter.
5. Add onion mixture.
6. Mix well.
7. Shape into patties and coat with flour.
8. Dip into egg white.
9. Refrigerate for a few hours.
10. Deep fry until golden brown.
11. Serve.
